Date and ginger loaf

What you need

  • 175g/6oz chopped dates
  • 175g/6oz brown sugar
  • 50g/2oz margarine
  • 1 tsp baking soda

What to do

  1. Put all ingredients into a bowl and add 1 cup boiling water.
  2. Add:
    275g/10oz self-raising flour
    50g/2oz ginger pieces
    5g/2 tsp ground ginger
    5g/2 tsp mixed spice
    1 egg
  3. Put mixture into a 2lb loaf tin and bake for 1 hour at 180 deg.
