Chocolate and lime delight

What you need

Base

  • 6 oz digestive biscuits
  • 2 oz butter
  • 3 oz plain chocolate

Filling

  • 4 oz white marshmallows
  • Quarter pint milk
  • 2 limes
  • Half pint cream

To decorate

  • Flaked almonds or grated chocolate

What to do

  1. Melt chocolate and butter in a bowl over saucepan of hot water. Stir in crushed biscuits and press into a flan dish. Chill.
  2. Put marshmallows and milk into a bowl over a pan of hot water and stir occasionally until melted. Allow to cool slightly. Stir in grated rind and juice from the limes.
  3. Whisk cream until fairly stiff and fold into marshmallow mixture. Pour onto biscuit base. Chill until set. Decorate.
